 Easy Teriyaki Salmon, Rice, and Veggies



I've been buying wild caught sockeye salmon at Costco lately and I cannot get enough of it!  It's only $9.99/pound and so delicious.  It definitely has a strong "fishy" taste (much stronger than regular salmon), so if you don't love fish then I would make this recipe with regular salmon, another mild fish, or even chicken or shrimp!  I normally love to make my own sauces, but for this meal I used Trader Joe's Soyaki sauce (pictured below!).  It's very similar to teriyaki, but it has sesame seeds and a slightly different flavor.  The sauce made this meal so easy to prepare and full of flavor! 

PREP TIME: 10 minutes
COOK TIME: 25 minutes

INGREDIENTS:
-1 lb sockeye salmon (I cut mine into 4 single serving pieces so they would cook faster!)
-1/2 a cup of Trader Joe's Soyaki Sauce
-2 cups of cooked brown rice (I used a 2 serving "90 second rice" package from Target..lazy!)
-chopped veggies of choice--I used frozen carrots, frozen broccoli, frozen green beans, frozen bell peppers, and zucchini.  Onion, peas, edamame, and corn would all be great too!
-2 eggs


Instructions: Preheat the oven to 400.  Spray aluminum foil with cooking spray and place salmon in foil (I did 2 foil pouches with 2 salmon pieces each).  Scrunch up foil sides to make "bowls" so the sauce will stay inside.  Pour 1/8 cup Soyaki sauce into each foil packet.  Scrunch packets up all the way so they are closed and bake for 20 minutes, then open packets and broil the salmon for 4 more minutes.  Although you COULD place the foil packets directly on the oven rack, I always put mine in a baking dish in case they leak!  Trust me, you don't want to clean teriyaki sauce out of your oven...I've done it and it's not pretty!

For the rice and veggies:
-prepare rice according to instructions on package
-add all veggies to frying pan with cooking spray or butter.  Cook on medium-high heat until soft.  Move veggies to the side to make space to quickly scramble eggs in the frying pan (you could also do this in a separate pan if you prefer).  Once eggs are cooked add them to the veggies and then add rice and 1/4 cup of Soyaki sauce.  Continue to cook until rice is warm. 

TIP:  if you want your rice to be crunchy like it is at Asian restaurants you should prepare it a day or two before and let it sit in the fridge!  This dries it out and gives it that crunch.  I didn't do that for this meal because I made it last minute, but I am going to do it next time!
