 Slow Cooker Buffalo Chicken + Three Meal Ideas

Does anyone else absolutely LOVE buffalo chicken?!  I used to hate it, but Cam LOVES it and slowly over the last 5 years he converted me and now I can't get enough.  I recently made a batch of my super easy slow cooker buffalo chicken and today I'm sharing that recipe and three different ways you can eat it!

SLOW COOKER BUFFALO CHICKEN:
2 chicken breasts
1/2 cup Frank's Buffalo Sauce (or any buffalo sauce you like)
1 chopped sweet onion

Seriously....that's it!  I just bake it on low for 6 hours and shred it with a fork!  This amount serves 4 people, but you could easily double or even triple the recipe if you're feeding a crowd!

There are dozens of ways you could use the chicken once it's prepared, but this time we made toaster oven tacos, toaster oven nachos, and a salad!  I also microwaved the last little bit with some shredded cheddar cheese and ate it straight out of the tupperware...it's that good!

Now we need to address a very important issue: ranch vs. blue cheese.  Personally I love both, but I know most people have very strong opinions on this matter!  Any time I say one of the dressings you can absolutely substitute the other if you prefer! 

First I made the toaster oven tacos.  You could easily do these in a regular oven or even a microwave, but I think the toaster oven works best!  I just grabbed two corn tortillas (mine always fall apart so I like to have two for reinforcement!), a big scoop of the shredded buffalo chicken, and topped it with shredded cheddar and shredded mozzarella.  I toasted the taco for 10 minutes and then added chopped tomatoes, avocado, ranch, and more buffalo sauce.

Next were the toaster oven nachos!  These were Cam's creation (you can tell because they're COVERED in blue cheese crumbles and dressing) but I ate some too.  They were absolutely delicious!  He just put a layer of chips on the toaster oven tray and topped with shredded chicken, shredded cheddar, and blue cheese crumbles. Once they finished cooking he topped them with avocado, blue cheese dressing, and more buffalo sauce!  So delicious!

Finally, I made a buffalo chicken salad.  This was delicious and it was nice to have some veggies after eating all of the carbs from the tortillas and chips over the last few days!  I used chopped romaine, shredded buffalo chicken, cherry tomatoes, cheddar cheese, and ranch.  You could also of course add avocado (I tried but mine aren't ripe yet!), cucumbers, celery, blue cheese crumbles, croutons, or anything else to your salad and it would be delicious!  I didn't add black beans to any of these recipes, but now that I think about it I'm wishing I would have opened a can on the first night because they would have been a great addition to all of these meals!  I always forget about beans or if I do remember I'm nervous to open them because I'm not sure if we'll finish them!
